7 Mushroom Meat Replacements (mushrooms instead of meat)
Been craving crab legs or a nice steak? Vegans and vegetarians rejoice, here are 7 mushrooms that you can use as meat replacements.
Portobello – Beef
Steak, tacos, hot dogs, if it’s beef chances are you can replace it with portobello. Its umami flavour makes it the perfect beef replacement and large sized caps make for one great steak.
Shiitake – Stir fry and gravy
Shiitake is a great meat replacement in any stir fry, especially when cooked with soy or miso sauce. It also makes a beautiful holiday gravy.
Crimini – In soup/sauces
Crimini really shines when used in warm sauces with pasta or hot soup. The buttery flavour makes it a great substitute for animal products in these cozy meals.
Button – Chicken
Whether on a skewer with other vegetables, pizza or in a nice soup button mushrooms make a pretty great replacement for chicken on the cheap.
Chanterelle – Crab
Smother chanterelle mushrooms in butter and garlic and it’s just like you’re eating crab, without all of the pesky shells. They’re fairly expensive to buy in a store, so these mushrooms are a great find when you’re foraging in fall/winter.
Enoki (Enokitake) – White fish
Another great mushroom for stir fry, enoki mushrooms are also the perfect addition to any ramen or soup. Their noodle-like texture also makes them a fun topper for salad.
Lion’s Mane – Lobster/Crab
Just like chanterelle, lion’s mane makes a really good crab/lobster replacement. The stringy texture makes them great for plant-based crab cakes.
